Ingredients:
Chicken:
400 grams chicken breast, cut into bite sized chunks
1 cup all purpose flour
1 tbsp corn starch
1 egg
1/2 cup water (125 mL)
Sauce:
5 cloves of garlic, minced
1 onion, diced
1 red bell pepper, diced (or cut into strips, depending on preference)
1 green bell pepper (or cut into strips, depending on preference)
1 tsp ground black pepper
1 tsp iodized salt
1 tbsp vinegar
1 tsp ginger, minced
2 tbsp light soy sauce
2 tbsp tomato catsup (or ketchup)
1/2 cup brown sugar
1 can pineapple chunks (save the juice)
2 tbsp cooking oil
1 tbsp corn starch
3 tbsp water
Procedure:
Chicken:
1. Mix the chicken with flour, corn start, egg and water
2. In a medium hot pan, add cooking oil
3.Deep fry the chicken chunks until golden brown
4. Remove from pan and set aside in a bowl lined with kitchen towels to drain excess oil
While the chicken is cooking, start preparing the sauce
Sweet & Sour Sauce:
1. Add oil in a frying pan/skillet
2. Add in the onions and cook until it starts to go translucent
3. Add the garlic and ginger then mix for 1 minute
4. Add the bell pepper and cook for another 1-2 minutes
5. Add the ketchup, soy sauce, vinegar, brown sugar, black pepper, pineapple chunks with juice and stir. Bring to a boil until it bubbles then turn down the heat.
6. Add corn starch slurry (mix corn starch with water) until it becomes slightly thickened
7. Add salt as needed (optional)
7. Transfer the crispy chicken into the pan with the sauce then toss to coat them for about 1-2 minutes
Serve hot with a bowl of rice and Enjoy!
