Bicol Express
Ingredients:
1 kg pork belly cuts
1/2 coconut cream
8 cloves garlic, minced
1 onion, diced
2 thumb of ginger, diced
5 pcs green chilies (adjust according to spice tolerance)
5 pcs red chilies (adjust according to spice tolerance)
1 tsp black pepper
1 cup water (250 mL)
3 tbsp shrimp paste
1 tbsp cooking oil
Procedure:
1. Cut pork belly around 1/2 cm inch
2. In a medium hot pan, add cooking oil
3. Sauté onion until caramelized and translucent
4. Add garlic and ginger
5. Add pork belly. Toss until semi-cooked.
6. Add water, cover until pork is tender
7. Once pork is tender, add shrimp paste, coconut cream, and chilies
8. Simmer until cooked
